Southern Vegetable Medley  

3 Potatoes, large, peeled, sliced thin             1 Green Pepper large sliced thin                  
1 Onion, medium, sliced thin                           1 Tomato, large, cubed 
1/3 Cup vegetable oil or bacon drippins'       Salt and Pepper to taste.

 

    In a large cast iron skillet, add 1/3 cup vegetable oil or bacon drippins'.  Warm oil and add all ingredients except the tomatoes.  Cover and fry until all ingredients are slightly brown; add tomatoes during the last 5 minutes of cooking.  Salt and Pepper to taste. Stir, turning all ingredients over from the bottom.  Serve warm.
